I’ll Be Home For Christmas…if only in my dreams

Hi remember me? It seems like forever since I have written a post. November and December has been crazy. Thanksgiving began with our house being broken into and almost all of our electronics stolen. Someone on my Facebook said you will feel a range of emotions that you never guessed you would feel. I did not think much about that comment until I realized they were right. I was never “angry” because it was just “stuff” but I felt the range of sadness. I was very blessed to have new floors installed in my house during the Thanksgiving holiday (a 40th birthday present), but I really missed having the Thanksgiving feast. If you have read my blog for any length of time you know Thanksgiving is my FAVORITE holiday.

I usually have my tree up the day after Thanksgiving, but due to circumstances (my house being worked on and a busy schedule) I just decorated my tree last night. But for some reason I was not in the Christmas mood. For various reasons, I am feeling homesick this year. It has been several years since I have been able to travel to Phoenix to visit my parents. I am so thankful my sister-in-law traveled to Florida in August because that is the last family member (on my side) I have seen in a couple of years. Thank God for technology because I do talk to my parents almost daily via text or email, but sometimes it is not the same.

Once again there is the potential for new opportunities to open up at the beginning of the new year. Great opportunities, but ones that may make it difficult to travel home anytime soon.

While feeling a bit melancholy I am thankful that I serve a God who loves me so much he came as a little baby, born in a manager, to destroy evil. I anxiously await the day he returns as the KING.

White Chocolate Chex Mix (My Yearly Favorite)

WHITE CHOCOLATE CHEX MIX

This one I use for gifts, I make up large batches and then fill some pretty plastic containers with a nice Christmas bow. This give you the salty/sweet combination.

3 c. Rice Chex
3 c. Corn Chex
3 c. Cheerios
3 c. pretzels
2 c. peanuts
12 oz. M & M’s
1 lb. white chocolate (I use white bark chocolate)

Melt chocolate. Mix with Chex, Cheerios, pretzels and nuts. Continue to mix and break up until white chocolate is completely dry. Add M & M’s. Enjoy.
